Why We Use Finest Call and Torani Instead of Fresh Fruit Purees
People ask us this, usually after we have just explained that our lemonade is squeezed in front of them. It is a fair question. If we squeeze the lemons, why would the strawberry come out of a bottle.
Here is the actual answer, including the part that is not flattering.
The heat is the whole reason
Fresh fruit puree is a refrigerated product. It has a short life once it is thawed or opened, and it has to stay cold the entire time, from our kitchen to your venue to the moment it goes in a cup.
Now picture a Saturday in July. An outdoor event, no shade worth speaking of, and a stand that has been running for four hours. Our lemonade trailer is built to work without power or water hookups precisely because most outdoor venues cannot offer them, and that self contained design is a strength right up until you ask it to hold a refrigerated product at a safe temperature all afternoon.
Finest Call purees and Torani and Monin syrups are shelf stable until we open them. They ride to your event at room temperature, they sit at room temperature while we set up, and there is no cold chain to break. In this climate that is not a convenience, it is a food safety decision, and it is the one we would make again.
Consistency, because your event is not a tasting
Fruit varies. Strawberries in May are not strawberries in September, and a case that came in sharp last week can come in flat this week.
At a market stall we can absorb that. We taste, we adjust, we move on. At your wedding, with three hundred guests over four hours, the drink somebody gets at nine at night needs to taste like the one somebody got at five. If the flavor drifts across the evening, guests notice, and the person who notices hardest is the host who paid for it.
Commercial puree is the same every time. That is its entire purpose, and at an event it is worth more than it sounds.
Speed, because every cup is built individually
Our made to order packages mean a Squeezologist assembles each drink at the stand. That is already slower than pouring from a dispenser, which is the tradeoff we accept to serve it fresh.
A measured pour of puree adds a couple of seconds. Preparing fresh fruit per cup adds considerably more, and when there is a line behind somebody, those seconds are the difference between a queue that moves and one that does not. We would rather your guests get a drink than watch us perform.
It also affects what we charge
Fresh puree that does not get used is gone. Unopened shelf stable product is not, and that waste would have to live somewhere. It would live in your quote.
What we are not claiming
We are not telling you a commercial puree tastes better than fresh fruit. It does not.
What we are saying is that for a mobile operation running outdoors in Texas heat, serving crowds, with no guarantee of power, it is the right call, and that the thing we protect fiercely is the part that actually carries the drink. The lemonade base is squeezed at your event, every cup, always. That is where fresh matters most, because it is most of what is in the glass, and it is why people tell us it is not too sweet.
The purest version is the traditional
Which leads somewhere worth saying plainly.
If fresh squeezed all natural is the thing you actually want, order our traditional lemonade. No flavor added at all. Lemons squeezed at your event, water, sweetener, and nothing that arrived in a bottle. Every word of the fresh squeezed claim is literally true of that glass, with nothing to qualify.
It is also our least expensive package, which we recognise is a strange thing for a caterer to point out. But it is the honest answer to the question, and the traditional is what we hand somebody who says they want to taste what we actually do.
When we will use fresh fruit puree
We can do it, and sometimes we should.
We offer fresh fruit puree in strawberry, peach, mango and blueberry. If your event is indoors, or shorter, or you want the flavor itself to be a feature rather than a nice addition, ask us about it when we are building your menu. It needs planning rather than a same week decision, because the whole point of the shelf stable choice is that it removes a variable we then have to add back.
Blueberry in particular is only available this way, so if you want it, that conversation has to happen up front.
